To guarantee the distinctive sensory qualities of ‘Aceto Balsamico di Modena,’ the must must originate from grape varieties such as Lambruschi, Sangiovese, Trebbiani, Albana, Ancellotta, Fortana, and Montuni. Balsamic vinegar must be produced in the administrative region of the provinces of Modena and Reggio Emilia.
